Chefs Matthew Niessner of Halls Chophouse and Steven Lusby of 82 Queen won the Taste: Iron Chef competition on Oct. 7 at the Culinary Institute of Charleston’s Palmer Campus. The pair created a menu of six dishes made from pumpkin and chocolate for the competition, which took place as part of the Charleston Restaurant Association’s Taste of Charleston event.
In the 45-minute allotted time, Lusby and Niessner created a full day’s menu:
· Breakfast: Pumpkin Pancakes with Fall Harvest Syrup, Chocolate-dipped Bacon, Pumpkin Latte, Basted Quail Egg
· Lunch: Chocolate Roasted Duck Salad with Pumpkin Seeds, Pumpkin Aioli and Watercress Served on Jalapeno Cornbread,
Roasted Pumpkin Salad with Marshmallow Creme, Bourbon, Pecan, Bacon and Caramelized Onions, Pickled Pumpkin Spear
· Amuse: Cocoa and Pumpkin Seed Dusted Seared Diver Scallop, Pumpkin Risotto
· Cocktail: Pumpkin Martini
· Dinner: Seared Tomahawk Lamb Chop, Chocolate Braised Short Rib-Pumpkin Ravioli, Sage Brown Butter, Chocolate Beurre Rouge
· Dessert: Pumpkin Latte Mousse with Pumpkin Seed Biscotti
The menu beat out the entry by chefs Tomelex Copeland of Red’s Ice House and Victoria Neikirk of Pearlz Oyster Bar. The fundraising event and the Taste of Charleston weekend will benefit local charities including the Ronald McDonald House, Hollings Cancer Center at MUSC and the Charleston County Science Materials Resource Center.
